Description
The International Dysphagia Diet Standardisation Initiative (IDDSI) is a global effort to improve the lives of people who live with dysphagia. This series is intended to give foodservice staff an overview of what IDDSI is and how to prepare food and beverage menu items using the IDDSI framework in order to keep patients and residents well-nourished and safe from aspiration. IDDSI Culinary Basics is collaborative effort, and all content is delivered by a team of Registered Dietitians and Healthcare Chefs who offer recipe demonstrations, tips and best practices, processing and testing demonstrations for different foods and liquids.
Objectives
- Learn and understand the purpose of IDDSI
- Understand the reasons why foodservice staff need to be well versed on the subject
- Understand the framework of IDDSI and how to test food and beverage products at each level for proper consistency
- Have a working knowledge of the method of preparation for food and beverage menu offerings at each IDDSI level as prescribed by the clinical team
- Learn different plating techniques that will provide patient and resident dignity
